Banana Bread:
Ingredients per loaf:
I’m Using the old imperial measurements. You may have to convert to metric if this works better for you.
4 oz. butter 6 oz. honey 2 med bananas 3 eggs 10 oz. self-raising flour
These are the basic ingredients and ratios not to be messed with. However if any allergies to flour, eg coeliac just substitute self-raising flour for Gluten free alternative. Click here for more:
Below is a list of optional extras which can be added depending on personal taste and preference.

*Cinnamon/nutmeg/mixed spice, Chopped nuts, various types.
Fruit, dried or fresh eg. Raisins, sultanas, figs, dates, apple etc. Chocolate, either powder or chips, coffee, seeds- flax-pumpkin-sesame
The possibilities are endless with no strict rules but generally just a pinch or teaspoon on the spices and a handful of the other ingredients.
Experiment and enjoy.
Baking time roughly 1 hour.
Method:
1. Line a regular size loaf tin with greaseproof paper/parchment and grease this. I find the quickest way to do this is with a little melted butter and a pastry brush. Pre-heat the oven to 180o C/356o F or moderate gas.
2. Add honey and softened butter a bowl and beat together well. Electric mixers make this easier. Add bananas and beat in also.
3. Add eggs one at a time and beat in well. The idea at this time is to add as much air as possible and don’t worry if it looks too runny at this stage.
4. Add flour and spices if using. It’s best to use a sieve as this also helps add air. Fold this in gently with a spoon or spatula aiming not to knock too much air out of the mix. Fold in other optional extras if using any.
5. Turn mix into prepared loaf tin and place in oven for *1 hour roughly. Middle shelf is best, and turn cake tin 180o after 30 mins to ensure a more even finish and no sides get too well done. To check loaf is done simply insert a skewer or similar through centre and if this comes out happy days. If it comes out gooey just put loaf back in for 5-10 mins.
6. When done turn out onto wire rack and allow to cool. Enjoy.
Suggestion, while this stuff is terrific on its own, you could always add butter, peanut butter, jam. If having at home or round a campfire try toasting it. Add custard. Cream or frosting.
Notes
When adding spices think outside the box. I started adding turmeric to mine and find it works really well. Turmeric is also very good for you and a natural anti-oxidant.
All ovens are different and cooking times may vary due to efficiency of oven or whether it has a fan or not.
